Coffee
Where do you roast your coffee?
Our roastery and packaging facility is in Cholargos, where we always roast to order.
Why is your coffee seasonal?
Coffee is best when it’s freshly harvested from the farms where it’s grown. For this reason, we choose to offer consumers a seasonal product sourced from small farms rather than a standardized product.
How long is your coffee good for?
We recommend consuming the coffee within three months of the roast date. For peak freshness, enjoy it within five to seven days after roasting and up to three weeks thereafter.
How do you choose your products?
We select our coffee, like all our products, with great care and respect for the final result. Our coffee comes from small farms around the world, ensuring consistency in each harvest, which is why our coffee is seasonal. We maintain direct contact with our suppliers and taste their best products. We emphasize quality and believe in value for money.
How often do you change your coffee?
We change our selections quarterly, following the harvest cycle of each country of origin, to ensure we always offer the freshest coffee.
Why is my coffee going to be different at times?
Since we change our coffee quarterly, it’s not possible to have the same products every time. Coffee is a product that comes from the earth and its production depends on many factors. We strive to select the best products to meet this immediate need. Each choice we make is designed to complement the flavor profile of your previous selection, always ensuring the freshness of a wonderful coffee in your cup.
What coffee grinder should I use?
The burrs off a grinder crush the coffee beans into a powder. The closer the burrs are to each other, the finer the grind. A slower extraction leads to a more balanced sweetness and acidity in the coffee’s flavor. We recommend a finer grind for very fresh coffee beans that are still in the degassing process.
If you increase the distance between the burrs, the grind becomes rougher. In this case, the extraction time is reduced. A rougher grind is ideal for less fresh coffee beans, as it allows more water to pass through, resulting in a cleaner cup.
For the best results, always choose a tapered burr grinder over a noisy single-blade grinder.
Tip: Always grind your coffee fresh before brewing, if possible. We can grind all our coffees for you upon request—just select the option when making your purchase.
What is the appropriate water to use?
Water makes up 90 to 98°C of your cup, depending on whether you're brewing filter coffee or espresso. Due to the fact that the water you use has a significant impact and is an important factor in the final product, we recommend using filtered water or mineral water. It is also important that the water is odorless, tasteless and relatively low in hardness.
We recommend brewing at a temperature between 92-96°C for coffee that’s fully rested. If the coffee is fresher, a lower temperature, like 89-92°C, will help create a more balanced cup. Additionally, brewing at a lower temperature can enhance the sweetness of your coffee. If you don’t have a kettle with adjustable temperature, to reach the recommended temperature, leave the kettle off for one minute after boiling.
Is your coffee recommended for all brewing methods?
At Anana we roast each coffee separately, adjusting its roast profile to a degree that will outline its full potential. Following that, we prepare our coffees with several brews and finally recommend what we believe suits best for each one.
What is the best way to store my coffee?
For the best freshness, we recommend storing our coffee at room temperature in an airtight container. If you plan to keep it for a longer period, you can also store it in the freezer for better preservation.
