How to brew 

Filter
Brewer : Alfresco Plastic Brewer
Dose: 16 g
Resulting Brew: 250 g
Water : 92o first pour, 88o second and third pour
Brew Time : 2:30 – 3:00
Target TDS : 1.35- 1.45

Espresso
Dose In : 18.8-19.2 g
Dose Out : 35 g
Brew Time: 24-26 s
Target TDS : 8.5 – 9.5

Rinse your filter with hot water. Begin your brew with 60 g of water (blooming) at 92°C to saturate the coffee bed evenly. Give it a gentle swirl to mix all the grounds and the water together. Continue your second pour with 120 g of water at 88°C with a circular pour. Finish the brew with 70 g of water at 88°C with a circular pour.

Let's talk about Villa Betulia

This coffee was grown by Luis Anibal Calderon at the farm Villa Betulia. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.
This microlot is 100% Gesha. This varietal was first discovered in Abyssinia, Ethiopia in 1931. Gesha was planted in Panama for the first time in 1963 and in Colombia in 2005.
