Cascara is the dried parchment of the coffee cherry, often discarded as by-product waste. The Cascara-Infused process begins with ripe cherries purchased from smallholder growers and delivered to the washing station.
The Cherries undergo flotation in tanks to seperate the highest-density one, which are then moved to drying tables for meticulous hand-sorting and defect removal.
The bright red cherries are pulped and sorted through various density channels, initiating fermentation. This is where the innovative Cascara-Infused process begins: the fermentation tank is filled with pulped parchment and water as usual , but cascara from previously dried natural lots is also added. The fruity cascara enriches the fermenting beans, enhancing their flavor and sweetness throughout a carefully controlled cycle.
