The chocolatey taste of this coffee, with hints of orange, passion fruit, and a touch of wine, can transport you to the Tolima region of Colombia.

           

How to brew 

Espresso
Dose In : 18.5-19.5 g
Dose Out : 35 g
Brew Time: 22-24 s
Target TDS : 8.5 – 9.5

Filter
Brewer : Ceramic Hario V60
Dose: 15 g
Resulting Brew: 250 g
Water : 92o first pour, 88o second and third pour
Brew Time : 2:30 – 3:00
Target TDS : 1.35- 1.45

Rinse your filter with hot water. Begin your brew with 60g of water (blooming) at 92°C to saturate the coffee bed evenly. Give it a gentle swirl to mix the grounds and water together. Continue your second pour with 120g of water at 88°C using a circular pour. Finish the brew with 70g of water at 88°C, also using a circular pour.

Let's talk about El Indio

This is a beautiful natural processed coffee that our coffee partners in Nariño have produced. These associations are composed of approximately 175 coffee-farming families. Since 2019 technical assistance hsaw been provided to farmers on natural processing and most of the growers we also work with now process at least a portion of their coffee as naturals.
The Tolima region is one of the most productive coffee-growing regions and they have always been represented in the Cup of Excellence along with every single coffee competition run by the Colombian Coffee Federation. The coffees are put on raised beds or concrete patios where the quality team monitors this process in order to get even, dry and correct moisture of the bean - 11% moisture content is achieved.
